Jailbreak your 1.1.3 or 1.1.4 iPod Touch.

I recently restored and updated my iPod to 1.1.4, and then had the problem of Jailbreaking again.
There are a few options there for jailbreaking your iPod Touch or iPhone.

ZiPhone
iJailbreak
iLiberty+

All of these apps are pretty straight forward, take a clean iPod Touch or iPhone running 1.1.3 or 1.1.4, and with 1 press of a button your away. These all jailbreak and install installer.

I tried all three of the applications and found that iJailbreak was the easiest as it included the option to activate applications such as Mail and Maps.

As with anything, things can go wrong.
