I know this is possible, is it similar process to PSTN i.e. Select transfer number via the 2talk web portal and they'll notify italk?

Had a browse through the italk website but was unable to find anything regarding notification, I do know that there is no contract etc.

Why would you want to shift from Italk to 2talk anyway? And yes it should work like a normal PSTN port

Its a PSTN phone number so yes its same procedure, the new provider will request italk to transfer it. Both are hosted in the same data centre so performance through your ISP should be similar.
