I've heard it's not good to run Cat 6 cables over AC cables in the walls/attics... but is it alright to run Cat 6 alongside tv coaxial cables?

No good because of interference between the cat 5/6 and mains can cause problems, and besides the electrical regulations require segeration of services power/phone/data/tv signal, usually the voltage rating of comms/data is quite low and if run next to damaged mains there is the possibility of the cables becoming electrically live.

What coax is installed? Immediate answer would be 'no', no interference between coax and cat6.

Oh, and if I was connecting the Cat 5e/6 cables, would I follow the T-568A or the T-568B here in NZ?

Ahh, thats ELV and LV, I would be surprised if you have HV in a house.

How much separation? In our office they ran the power and network down the same white snap on conduit on the wall....

ELV (and TNV) to LV?, Legal requirement, punishable by removal of electrical registration is 50mm or a solid permanent insulating separator. Recommended 300mm minimum for interference mitigation.

Doesn't it depend on the cable?  I've seen both 568A and 568B labelled on cables (no the same cable obviously).
