Backup current ROM (How can I do this?) 4. Get CM7 ROM (are there different versions out there?) 5. Flash CM7 ROM onto my phone 6. Enjoy

Once rom manager downloads the ROM and google apps package, it will ask you if you want to backup device, clear cache, and / or wipe data.
Log on to cyanogenmod.com and click install CM7 for your device. Web site has step by step instructions for you to follow.

I am guessing rooting your phone would be an issue if it needs to go back for repair. Can you safely root/unroot your phone? (I am running 2.3.4 Official on I9020T)

Nope, the warranty is still good most of the time. Just not for software related issues.
