Cheers for that.
So the process is:
1. Get Root
2. Install Rom Manager (I have used ClockWorks ROM in the past, not sure if it is the same thing but it sounds like it)
3. Backup current ROM (How can I do this?)
4. Get CM7 ROM (are there different versions out there?)
5. Flash CM7 ROM onto my phone 
6. Enjoy

From what I understand, CM7 has the notification panel toggle controls out of the box as well as the NLB. 2 Big reasons to unroot, it seems...

Any step by step for dummies guide out there?

Once rom manager downloads the ROM and google apps package, it will ask you if you want to backup device, clear cache, and / or wipe data. 

Log on to cyanogenmod.com and click install CM7 for your device. Web site has step by step instructions for you to follow.

I'll have a look tonight.

I am guessing rooting your phone would be an issue if it needs to go back for repair. Can you safely root/unroot your phone? (I am running 2.3.4 Official on I9020T)

Nope, the warranty is still good most of the time. Just not for software related issues.
