I use the switch widget to turn Bluetooth on in the car
but on Gingerbread it seems I now need to go right into settings and after turning on Bluetooth click on discoverable.


Any way to activate Bluetooth and have it make discoverable with one click?

You only need Bluetooth to be "discoverable" while pairing devices. Once devices are paired there should be no need for Bluetooth to be in discoverable mode - unless the Android implementation is flawed.
