I currently own an ageing and somewhat slow (and small) LG Optimus P500. I'm seriously considering splurging out on a new Galaxy S3, which I expect to dazzle me with its superiority over my old phone. My question is, if I simply transferred my existing 2 degrees SIM card and the 16 GB microSD card I am using, would all my apps etc (including ones I've paid for) work correctly with the new phone - or am I asking too much here? I understand that everything else related to my phone - ie number, contacts, account with 2 degrees, etc - would transfer.

Quite simply no

best bet is to back up your contacts to your computer (CSV) as this will transfer all the stored contact info, what is stored on the sim card will not contain extra info like email addresses, road addresses etc, just basic anme/number. The restore the CSV data to your new phone.

As far as the apps go, as long as you use the same google account the apps will be avaliable via the play store, apps already paid for will NOT require payment again.

There are apps avaliable that will do a full phone backup/restore from SD card, this may be a better way to go

Sync all contacts to a gmail account.
Sync all SMS and MMS and apps and data, including Bluetooth pairings and WiFi passwords etc with Titanium Backup.
The account moves with the SIM but you'll need a new smaller SIM or cut existing one down to size.
Apps just get redownloaded on new phone or restored with Titanium Backup.
Remember if you use Titanium then all app data, messages, game progresses, app settings etc will all be restored. If you just re download from Play Store you will have to set all apps up again from scratch.

Just be aware you need root access to use Titanium Backup. Use the opportunity of moving to a new handset to cull all the apps that you accumulated on the LG that you never actually use. They will be sitting faithfully in your Google Play account ready to be downloaded if you discover you really miss them.

Thanks for that caution Dingbatt - I just picked up the S3 today and I"m more or less going with your suggestion anyway :-)
