Currently using S-video to record sky on my htpc, is there a way to get a better signal to the computer, eg a component recording card?

mmm so did a bit of googling and came up with this http://www.leadtek.com.tw/eng/tv_tuner/overview.asp?lineid=6&pronameid=322 available for $170 NZD.  Will this do the job?

I dont know a lot about MCE interfaces, however it would seem it would. If it were me then I would be looking at getting a DVB-S card aswell so that you can stream the direct mpeg streams encoded by TVNZ/TV3 etc rather than using some lower quality encode of a analog feed.
