Wagyu Picanha is on the menu for the weekend, quite excited, hoping the weather holds. Kids are excited about Marshmallows afterward.

 

Any recommendations on sides. We will likely do a potato salad, maybe some brussell sprouts with pancetta, toasted almonds and feta?

 

I'd quite like a bean salad, but no-one in the house likes beans much.

Works with any green (I use silver beet)

Since starting our own business life has become very busy and I feel our diet has suffered as a result. Finding time to shop and cook is a mission. I have been thinking about services such as Hello Fresh and My Food Bag, What are folks thoughts on these services, are they worth it dollar wise and is the food of good quality and recipes/meal plans good? I have read some less than stellar reviews of both these examples. 

 

What do Geekzoners think, are they good or are there better alternatives?

I really rate Hello Fresh, but I wouldn't say they are quicker to prepare than other meals, as they aren't pre-prepared. They are simply providing all the ingredients and step-by-step relatively idiot-proof instructions. Saves a trip to get the food, and the trouble of coming up with your own menu. Taste is generally pretty good, but I have found I need a break between week 1 and 2.

 

Woop is ready to heat and eat, as are FED. They are pretty reasonable, I'd still generally prefer a freshly cooked meal. They are relatively high in fat, so plan accordingly.

We have had Hello Fresh a bit recently, and I am not kidding when I say, every single meal for 3 weeks as had Spinach in it somewhere. I don't mind spinach, and I understand in the current conditions choices may be limited, but I feel like I've had quite enough now :)

Yum, I love Spinach. It's great with thinly sliced steak or pork. My wife does it where she basically dips it boiling water in a strainer for a few seconds then adds soft boiled crushed eggs and diced bacon served on toast for breakfast.

I know I may have mentioned this before, but the rotisserie attachment on my weber.

 

This weekend I managed to get my hands on some wagyu picahna and cooked over hot coals, was absolutely god-level fantastic.

 

I didn't get any after photos but here are the before.

We had a go at this and had it for lunch. What a fantastic recipe. So simple and worked well. The only issue was I didn't cook it quite long enough and the inside was a touch doughy which I will fix for next time. 

 

I highly recommend it. I followed the measurements exactly, but next time I am going to add a little more yeast (unless someone tells me not too) as I like the smell and taste of more yeasty bread. 

 

The best thing is, my kids can make it without help except for the cooking part.

I enjoy a bit of bread baking. I have a book of different bread recipes from Paul Hollywood of Great British Bake-off fame. He always talked about using more yeast than conventional. Many bread recipes would call for a 7g sachet of instant dried yeast but his recipes were always using 10g.

Been attempting sour dough.  Started a started at the beginning of lock down.  On my 7th and 8th loaves today (Not as good as 5th and 6th where I got a really good rise and good ear.).  First two were tasty but kind of Frisbee like, once I got the ratio's right they have been getting better.

I've finally found a pan pizza dough I'm happy with, and I'm fairly happy with the bread rolls I've been making. We were given a bread maker recently, and the dough/pizza settings have been used quite a bit during lockdown.

 

Neither of these are original, borrowing heavily from online sources.

 

Pan pizza dough (3x 10-12")

 

2tsp yeast
1T sugar
1/2t NaCl
1/4 cup milk powder
1 1/3 cups H20
2T oil
4 cups HG flour
1t onion powder

 

Throw it all in the bread maker on the pizza setting and let it do its thing. Divide into three. I use cast iron skillets for cooking. Put a slightly excessive amount of oil on the pan and a layer of butter on the crust. Cook at 200C.

 

Dinner rolls (16)

 

1 cup H20
2T butter
1t NaCl
1 egg
1T sugar
3 cups HG flour
1T yeast

 

Throw it all in the bread maker on the generic dough setting and let it do its thing. Divide, rise, smother in butter before cooking at 180C.

We usually buy pizza bases, but this seemed so easy I thought I'd give it a go and *WOW* it was fantastic. Best bases I've had in well over a year except for perhaps 1-2 of the very top pizza places in Auckland and even then this was pretty comparable.

 

I have always tried to do my pizza in the weber kettle but this time I did it in the oven, no more kettle for me.
