For which platform?

I use the official Sony Playstation Wireless Stereo Headset.

Easily get 7 hrs of use before I need to charge and you can use and charge at the same time as long as your USB cable is close enough.

It also works on PC.

Has a slider for VOIP to Game ratio and another for volume.

I have never used the mic for gaming but have used it for Skype.

about $125 on NZGameshop.com last time I checked

I use Turtle Beach X11s on Xbox (can also be used on PC) and I find them brilliant. They're a reasonably priced headset as well. There are more expensive models with wireless dolby 7.1 surround but I find the X11s to be more than enough.

I am running the Sennheiser PC 350, they are quite good apparent from wear and tear around the earpieces although it still works fine. Although I brought mine for $350.00, you can get them at $299.00 from Computer Lounge.

Logitech G35 - they are a fraction over your budget but are well worth it.  I've got the wireless version (the G930) and they are the best headphones I've owned for gaming on the PC.

+1 for the G35's; they could do with a tad more bass in my opinion, and configuring some games so that they work well with the virtual surround sound is a bit of a pain (especially BF3); but music sounds excellent and the microphone is not bad at all.
I picked mine up from Alphacity for under $100 several months ago.
