I want to be able to stream the Americas Cup races to my campervan TV while we are away in February and March.

We don't normally watch TV while on holiday so have no satellite dish on the camper.

I know that I can watch live TV on my Samsung A5 but want to stream it to the TV, which has an HDMI input.
There is no WiFi in the camper.

Is it a given that by using a USB - C to HDMI cable that it will just work? or are there fish-hooks?
How do I find out if the Samsung A5 has the "HDMI Alt" mode?
Does the TV have to have any special capability to be able to accept the stream?

No unfortunately the Galaxy A5 does not support Alt mode. Only a relatively few models do - https://www.samsung.com/au/support/mobile-devices/how-do-i-connect-my-phone-to-my-tv-using-hdmi/

I wonder if there are any other ways to achieve the same thing.

At worst I could watch on my 8" tablet using the phone's hot-spot - but would like the bigger screen if possible.

You could use the phone as a hotspot and then cast from the tablet to a chromecast plugged into the tv

Miralink stick, uses wifi direct so no need for a wireless network, acceptable quality for a small screen, dirt cheap to buy one.

Last time I used a phone as a hotspot it set up a wifi network. Not sure if they have client isolation?
If they do, you could use a travel router, that's also how to chromecast in hotels etc

Set the phone up as a hot-spot, connect travel router to this and it then establishes a Wifi network that you connect all your devices to. You can then cast to chromecast etc. I think it would be a useful device to have in a campervan anyway, so that if you're in range of a wifi network at a campground etc, you can use that on all your devices.

Can you cast thru the router? I would have thought it would block the discovery of the chromecast with the NAT, also not sure what the router adds in a case like this, I have used them with a phone hotspot before due to the device limit on the phone, but I dont recall the phone seeing anything to cast to on the other side of the router.

You misunderstand. Tablet to Chromecast, both on lan side.

EDIT: If travel router only has one wifi interface, which the example does, things won't work anyway without another wifi client device on travel routers WAN interface which connects to phone hotspot.

think you can cast with...

Google Home app on the phone

phone set as WiFi Hot spot

Mi box connected to the TV and the WiFi hot spot

have a similar set up and works very well.

These travel routers have two wireless interfaces, they need that in order to connect to a public (client isolated) wifi and then form a private network for your clients. That's exactly how I use mine in order to chromecast in hotels. It also bypasses the client number limit you sometimes get on such networks, and you only have to log into the captive portal once, on the router, rather than with every device.
The one I have is an older d-link model but as far as I know they all work essentially the same. The one linked here can take a SIM I think, so you could use that rather than phone hotspot
