Anyone know how to do this?

I've go the IP150 module - and while it allows me to arm the system fully or in sleep mode, it doesn't seem to have anything for assigning what sensors are activated in sleep mode.

I've also got access to babyware for my system...a look through there allowed me to zone sensors - which I read as partitioning, but again nothing jumped out at me to say when activating sleep mode include this, this and that sensor.

What model do you have?
But what you are looking for is the zone definitions

A "zone" is a single sensor, a partition is a group of zones that act like a completely separate installation

A zone can be set as instant, delay, stay, 24 hour fire etc. this controls how it acts when you say arm the system. for instance in stay mode just the perimeter sensor/zones will cause an alarm

I've just had another look in babyware.

Yeah I get that with the zones, so if they're all currently set to entry delay, with smokes set for 24 fire.  I still don't get the link on how to say when I sleep arm, I want zone 1 armed, but zone 3 is off (as it's upstairs).

you need to set the zone 3 to be a sleep zone or a "stay" zone

Under the zone type?  I see Follow (Sleep / Full Arm) and Instant (Sleep / Full arm)  they seem to be the only things that mention sleep.

Follow (Full Arm) Zones Upon regular arming, the zone is Follow  Upon Stay or Sleep arming, the zone is bypassed by the system.

This is what you want

The trick is in understanding what "follow" does, have a look at my explanation in my PM and then check out the manual... you should get it in no time
