Does iPad/Airplay Screen Mirroring work? I know the TVNZ app has no airplay functionality, but you can have Airplay mirror everything your iPad/iPhone does - would this work?

No I believe apps are able to deny that also.  Because of said rights.

Nope your options for tvnz ondemand on a telly, are, buy a telly that supports it or use a laptop.  Unsure if an HDMI cable off an iPad would work.

It doesn't work off an iPad with Airplay .... but .... flash of inspiration from "buy a telly that supports it" ...

I would guess that one of those tablet-on-a-stick doofers that plugs into an HDMI port should do the trick .... must try it

Um not sure.  I assume you're thinking of an android TV.

It may be cheaper to look at a samsum bluray player with the smart tv.  As I understand TVNZ paid for the samsung app.

Not sure if people have had success sideloading it onto an Android device other than a Samsung (I think it is only available officially on Samsung Devices and TVs/Smarthubs).

Another option for you to consider would be a Samsung Bluray player which has SmartHub in it (Cheaper than a TV).

Have a laugh at this one. I found a PC screen recorder - there are lots of them. Went to tvnz.co.nz (I actually wanted Nigel Latta's inequality program) - it was there OK but when I tried to play it on my PC it told me the program is not available in my location! That's what I get for being a unotelly user so I can get NetFlix and US iTunes and all that :-)
