Seems to be a lot of admin/updating needed to work this solution (just a comment).
Why is this, do the streams get blocked by ISPs/Content providers? Or it is something else that breaks it.

The source stream urls change slightly from time to time usually trivial to fix. But yes at any stage the providers can choose to geo block or add token authorization to their streams.
Most of what is being discussed here is additions or improvements to this little project.

I have Kodi running on both my W10 machine and on a Mibox4K (AndroidTV), my dns log is showing them both querying the epg url every 5 minutes. Is there anyway to increase this? I see no need to be checking it more frequently than every 30 minutes, in the case of a live event running longer, or every 24hours for normal TV.

Matt has an epg for BOTH au and nz, check his latest post from today for the new epg.xml file. Google and then go to his latest post.
I installed this last night, it works like a treat. Nice to have the TV Guide for both NZ and Aussie channels. The PVR IPTV Simple client works like a treat and this is the first time I have used this functionality in Kodi. Its much nicer than having to go into different apps etc.
Assuming I am looking in the right place, it was already set to 120mins and is obviously ignoring it. (andvanced or expert) Settings/PVR & Live TV/Guide/Update Interval.
EDIT: Obviously I can only see that it is checking for the domain every 5 minutes, I am not sure if it is pulling the xml file every 5 minutes. Or only doing that every 120.
EDIT2: Changed it from 120mins to 15mins, and it has made no difference, dns logs still show 5 minutes look ups. Appears I am not the only one with this issue, but I cannot see any complaints on the kodi forums or their bug tracker.

I think the epgs contain around 7 days worth of content - so cant really see it needs checking more than every 24hrs in my view.
I cant see that any of those settings show as 5 minute activities though.
EDIT: Polling a server every 5 minutes would be ok - downloading mbs of data every 5 minutes would obvioulsy be over the top.
Makes me think that perhaps downloading the epg to a local share on your server/pc and making the kodi box pick it up from there may be a good idea after all.

I have given the advancedsettings.xml a try and it does not make any difference unfortunately. Looks like I will just have to leave it and hope the hosts do not mind the excess look ups.

the example in the wiki writes minutes for the interval, in fact it seems to be seconds

I have done some more digging and it looks like it is doing a look up every five minutes for the channels that do not have epg data. So in my logs it will be, France 24 English, NHK World, Aussie Bonus Channels, Bonus World Channels, Sky News UK, NASA TV Media Chanel, Bonus sports Event, DW English, RT, Nasa TV Public, TRT World, Eurnoews, RT Docs and Kodi 17 Test. It is correctly looking at the cache first, then going to Matt's github to see if that is updated. Unfortunately I cannot tell if it is downloading the 4mb file each time, or just looking for a header change?

It appears emptyepgtags is the setting, but no idea why it did not override 5mins. Now to see if I can replicate on the AndroidTV.

So at the moment both Windows and AndroidTV (Mi Box3) are doing their look up no more than once every 24 minutes, based on me telling it to do look ups for empty epg every 1440 seconds. However Windows has now done a 48 minute look up, ie 2440 seconds. I do not mind it doing less, will monitor it over next few days and see how it goes.

As @davidcole metioned, I am no longer convinced that all of them are minutes/seconds as per the comments. And with Windows doing it at 2880 instead of 1440 I am not sure what is going on exactly... but it is better than every 5 mins.
