I thought they were supposed to have assisted gps, yet it takes forever to get a lock when opening anything that uses it - talking like 5 mins showing that its got 4-5 satillites it still shows seeking.

I usually get an approximate fix within 10-15 seconds, then a full fix around 30 seconds (depending on coverage.)

The important factor is the firmware version you're running. The latest version is 21.0.0.16 - you can find out yours by typing: *#0000#

If you're running an older version you may need to unlock your phone and update to the latest Nokia-released version as I'm not which is the current official Vodafone version. There are lots of threads in this forum which details the steps needed.

I just did another test, sitting inside at home, and I got an approximate fix in less than 10 seconds from launching, and a full fix in about 20 seconds.

Yep, on the later firmwares you should consistently get a lock within 20 seconds.

Thats what I have on the phone, and I can fail to get lock for 5-10 mins after starting google maps or the sports tracker while driving - its almost immediately got 1 or 2 sats that show in Google maps, just no fix for ages, just the horribly inaccurate cellsite positioning.

What should be in the assisted gps server? How can I tell if it is communicating with it?

I have no idea where that came from, and it doesnt resolve on a PC so I think its wrong.

Will try that when I next go for a drive.

Have put garmin on it so that should solve the problem with data dropping out all the time on google maps, still no joy finding the funny voices for it that my mate has on his hardware gps tho...
