To turn on at night when there is activity such as my daughter leaving the sleepout?

The control with the "clock" icon (on the right) controls how long the light stays on for.  The one on the left with the "sun" icon controls how dark it must be before the light comes on.

I'm not sure which way round he controls work but I think the left on is set to only come on when it is very dark, try turning it to the other extreme and then the light should be triggered by any motion.

I assume that the sensor is pointing in the right direction to catch her but you can check this once you've got it set to trigger in daylight.

Turn the knob towards the crescent moon, this sets the light to come on when its dark,turn the other one towards the + sign which is the time it stays on for.

How is life in the apple ecosystem ;)

Covering the sensor should help you set it up by mimicking night time darkness.

Or wait until it's a bit darker and you can set it up for that exact level.
