I make a fruit bread, which is essentially a hot cross bun....but get to have it year round.   Cinnamon, brown sugar, cranberries, raisins and dried apricots.

Anyone else remember the HCB’s that you could buy that came in a foil lined cardboard tray? Youd slap the slab in the oven without separating the buns.

As a kid I remember having zero patience for the cooking time that required.

British Marmite under the cheese is pretty good too. I have not tried the NZ version in that use case though so I do not know whether that works as well or better. They add sugar to it for some reason, so not sure whether the full umami experience comes through!

British marmite is also the work of the devil. The antipodean version is the evolved and purified version.

Wish they were available all year long, hopefully they keep bringing them out earlier each year. 😃

 

 

 

 

I butter the halves and bung them in the air fryer for about 2 minutes - then butter them again. Perfection 😍

panettone is yum. Got a decent recipe? I ask the Brazillians and Italians I know and they just buy them.
I'm sure a decend homemade one runs rings around shop bought panettone.

Stopped buying supermarket HCB about 12 years ago. Have a look on the back of the packet and you'll see food colouring as an ingredient to fool you into thinking the colour of the buns means they are rich with spices, which they are not!

This is the recipe I use, modified from an award winning HCB recipe where I add more spices and fruit. I'm on the generous side with the fruit. (The photo is of the original version with less fruit and spice)

Adjust the fruit and spices to your liking, but I've had no complaints about the recipe as it stands, just requests for the recipe.

Does anyone have a good sweet gluten free bun recipe? I shouldn't eat gluten but every year at Easter I do and then pay the consequences.
