nate: Just remembered a unique order today - guy came in for a flat white with six (yes, six) sugars.

We also go through a ridiculous amount of soy milk, mainly ordered by guys. Go figure.

Speaking of coffee orders, what's the max number of words you've heard in a coffee order? A team mate at work orders "Takeaway trim flat white" - that's more words than others in the team, even though it's not too bad I guess...

That sounds about right. I try to get my girls to engage the customers, ask how their day is etc. Be friendly but not too in your face.

Some people it's like pulling teeth - others, we need a pitchfork or other sharp object to pry them away from the counter

Venti, Breve, 140 degrees, white mocha, whipped cream with a double shot of hazelnut. Thats the longest I've heard :-)

How many people have the stove top devices.
I have two different stove top percolator, one where the hot water gets pushed up the pipe and over the coffee sitting in a filtering tray at the top and the type that push's the water through the coffee.

Both good for coffee on the run, I have never been able to find out what the best type of grind for these devices are.

Any idea's?

Beans: lazy days - Cafe Laffare City Blend, prefer - Havana 5 Star
Cups: Brown Cafe Laffare latte and flat white sized cups
Tamp: Bog standard no frills tamp from you guessed it - Laffare!

At work
=====
Name of my company: Crema Capital (we are investment managers can you believe)
Grinder: Cafe Laffare Mini Macho (cheap but very good!)
Plunger: Bodum 3 cup
Beans: As for home
Cups: Crappy cheap white mugs
Goal: Make more profit to justify buying an E61 Rocket for work

Number of cups per day: 1-2 max

Started off with a Neopalitania ( with biult in grnder ) but after a few years just lost the pressure, then got a sunbeam ( now dont laugh it really is quite good ) seperate adjustable grinder, Has sperate pumps and heat so you can express and steam milk same time. Use Havoc beans ( river rush ) as they are local and roast couple times week. Found Ebony Manhatten a smooth blend but the roster stopped shipping.

Ideal manchine : ROCKET

Intesting I still have the Napoletana II - steam pressure has dropped a bit after it's last service - so was looking at the sunbean cafe series (around the $800) mark - since I doubt the wife would swing for a Vibiemme Super Domobar. Or a Rancilo Silva

Tend to use Havana X beans as found they work the best - Mojo I prefer to buy at the shop but found the coffee really weak in the napoletana.

I also have a cheap crappy, breville $40 trademe special for at work since I don't do instant - which is all that's available there (apart form the Mojo in the ground floor).

Breville BarVista (Best $110 I ever spent) and a Sunbeam cafe series grinder, most importantly a 500mL cup, so I can have serious coffees with 4 shots....mmmmmm 4 shots....

Current kit:

Rancilio Silvia V3, PID'd it myself using a kit from the US
Rancilio Rocky grinder (really want to upgrade it)
Behmor 1600 roaster which produces superb roasts as far as home roaster go

The kit does pretty well aside from the grinder annoying me. The machine is not quite beefy enough to do perfect milk but good enough for now. The PID made all the difference in the world to shot quality.

What I strive for? Coffee of the quality you can get at The Memphis Belle in Wellington. Have never had better.
