I ordered UFB with Chorus as the LFC a couple of months ago. The scope/design was carried out first, as my property is on a ROW and the neighbours had to be notified of the build work required. It was determined to be a category 1 build, the notification period has ended and my order shows as "consent granted" in the Order Tracker. What I would like to know are the details of the process Chorus follow to schedule/allocate the work...or does the service partner, ie Downer or Visionstream handle this?

Your ISP will be able to tell you approximate dates once Chrous have the build work scheduled

I did something similar for a property on the West Coast and it took around 4 months to get this completed. Once the build is signed off and with the ISP it happens pretty quick - few weeks.
