From the help page you linked to have you tryied the instructions under "Advanced Features"

 

 

You can easily configure your Wi-Fi Extender through an internet browser. Change your Wi-Fi name and password, upgrade firmware, manage IP addressing and more.

 

Go to http://192.168.1.240
Login with:
Username: Admin
Password: @admin

Thanks, I got in and changed the channel to 36 as well. 

 

Still not showing up as an option.

Try changing its Wi-Fi name. Pick a channel that is different from your router. Then re-boot the extender.

The laptop is dual band I hope? Even 3 years ago there were still some single band cards going into some laptops.

that is the correct answer.  :-)
We still dont have the most basic of info : exactly what wifi hardware and how it was configured .

Im guessing its just repeater/extender nastyness . Good luck with that .
Try changing the SSID on one of the wifi units .
Dont be surprised if repeater/extender mode simply doesnt work .

So looking at this again, I have a Qualcomm Atheros AR9485 adaptor which supports 2.40Ghz only... 

 

Is there anything I can do to my access point to help this now?

nope you need a better laptop./wireless card.

 

you could get a usb wifi adapter for it, but depending on the USB standards it might not be much better
