People have posted their screens with a description of what was used, there is a thread outside of this one.

EDIT: Whoops, thought this was in another thread and i was trying to point to this one.
Need to learn to read instead of skimming on my phone.

Not as flashy as most peoples, but I'm more into simplistic and clean design.

HTC Sensation
Cyanogen Mod 7

Go Launcher EX
Go Launcher EX Notification
SiMi Clock
TM World Clock
Widgetsoi
DoubleTwist
Fancy Widgets (Weather 4x4)
Go Widget (Calender + transparency skin)

Think that's all of it, all free items from the market.

My crack at an ICS looking theme after trying out the real ICS(cm9) and loving the look but not being able to use the video camera :(

Go launcher + ICS theme
Go Locker + ICS theme
Go widgets - calendar and task manager + ICS widget theme
Criskelo Rom version 37 (based on galaxy s2 stock rom but themed and some crap taken out)

MIUI VanillaICS

MIUI portugal 2.2.17 based on android 2.3.7.
Theme I am playing with as I learn to theme miui properly. VanillaICS!
It is mostly made up of MIUI 4.0 bits but the launcher and systemui are custom and based on ICS. Icons are miui extended. Widget is beautiful widget.
