I have two identical solar panels which came with supplied wiring. I understand of I wire them in series I would be adding the voltage together and the amperage would remain the same? Does this mean I can use the supplied wiring if I wire them in series as it would be the same amperage as a single panel?

Panels are not new so it is not a case of ask the shop / manufacturer.

Because it is a series circuit - Yes.

Depending on how long your cable runs will be, you might still need to use larger wires to keep voltage drop low.
