Hey Foobar, on the topic of cat6 cabling everywhere. Gigabit wireless 802.11ac is now here and filtering in to notebooks and tablets so cat6 cabling is not as important as it used to be and probably no longer relevant in the likes of bedrooms and kitchens where previously you might have needed it. Im going to stack the AV cupboard up full of ethernet ports since those devices arent moving anywhere (AV reciever raspberry PI XBMC, raspberri PI OSCAM server, Dell gigabit wireless dock, set top box and the media PC that runs XBMC Ubuntu and streams sky/freeview to android/iOS/windows clients around the house using TVHeadened; how awesome is that once you figure it out!). But realistically, apart from an AllInOnePC in the studynook and the TVs in the lounge and living room (with XBMC raspberry Pis each), then cabling up the rest of the house would be a waste.

Still need to get the data to the accesspoint, which uses cat6 - ac uses 5GHz so has problems with anything more than a basic non-insulated gib and twigs wall. Also you would want it to the smart tv's etc in the bedrooms, games consoles in bedrooms, and plenty of other devices.
you dont have to be confined to a tv anymore, those days are diminishing when u can consume tv on mobile devices. its much more convenient for when youre not doing some serious watching of movies and things that benefit from big screens and great sound. if u set up a decent low powered low cost server u just need to add more tuner cards as the kids get old enough to consume tv on their mobile devices which is how they prefer to do it nowadays anyway. as great as all this is being able to manage recordings better than mysky from any device anywhere and watching your recordings on anything anywhere, this will all have a limited lifespan anyway. TV over ip will kick in and you will be able to buy the channels straight from the source making sky obsolete. apart from sport sky dont create much content themselves so the future doesnt look great for them unless they come up with a new model
I can tell you that from the people with kids that I know, the kids are usually watching things on TV with the ipad facetiming their friends. They think tvnz on demand is "pretty s..t" how it only works on the small screen and cant even airplay to the tv.
If you get your house well designed, you shouldn't need any/very minimal mechanical ventilation, by using natural stack ventialltion, which relies on hot air rising, and bringing in cold air from below. As someone mentioned earlier, a passive house design is an option. Also underfloor heating with water pipes in the slab, heated by a water heat pump is one of the most efficient ways to heat a house.
Don't use underfloor heating in areas with good solar gain. Why? Because the response times are really slow due to the thermal mass of the slab. Heat being released from the slab, the sun then comes up, Suns heat combined with heat from the slab = room too hot. And the heat that has already been put into the slab is now wasted. Heat that you have already paid for.
