We recently did up a building used for seasonal staff accom,

 

We removed a 25L cylinder in the kitchen and fitted, a variation of the instaboil that has some retained insulated  storage, 2-5L

 

So basically its mini undersink version of the 25L cylinder,

 

However due to water expansion when heating it required a special tap to vent an excees expansion.

 

 

Is it tempered to 55C, or does it come out fully hot?

It's got a thermostat so will be set to one of those safe limits, or adjustable ( sorry not near the unit atm )

 

Unlike the good old days where u would hear the hw cylinder boiling from the wet back

Just make sure the cabinets are designed so that the heater can be removed. They sometimes fail in less than 20 years.  It's not the sort of thing you should build in even if it's brand new.
