Yeah, that's about what they're good for. If you've got good-quality German knives like Wusthoff's then you send them to monks who live in a cave in the mountains and have spent decades studying the art of knife sharpening to get them done.
Japanese knives like Miyabis, same thing but with Buddhist monks.

You don't. In particular "laser edge knives" can't be sharpened, but they're also so cheap that you can just toss them and get new ones (see my earlier comment). For bread knives specifically you'll need to use a serrated knife sharpening tool that fits the gullets of the knife.

I've just invested in the Syperco Sharpmaker system for my kitchen knives, as it seems the best compromise between fully manual stones, and a 'system' to guide you towards getting the right angles. Most of my knives are Globals with a Shun carving knife and an Amazon.com butcher's cleaver. I'm still perfecting my technique, but I can see already that this will be everything I'll ever need, and it also does scissors and serrated knives.

they turned up and i started shapening one of my kitchen knives... started with 400 and it just didn't seem to be doing much.
worked my way up through the grits and as the numbers got higher, they seemed to be more coarse and worked better.
I decided that they must be numbered back to front.. aliexpress special or something, so worked my way through the grits backwards.
By the time i got back to the 400 grit it was putting a real mirror polish on the edge and was razor sharp... funny.
i bought one from aliexpress, arrived 3-4 weeks, today. it works like it should. my knives went from can't cut anything to cuts everything. can't do fruit ninja with them- i'm not very skilled at sharpening, but when knives don't cut and the other tools don't work, it's better than nothing.
got the 400/1000. came with a chip but who cares, it's so cheap. i think the numbers are labelled correctly.
