If it is infrequent access, you can get a 1/4 sheet of plasterboard for $12 and cut it to size with a craft or Stanley knife (there is a trick to neat lines though, look it up on YouTube).

Less robust than some options but you said the last one did 36 years and this will be way easier if you don't already have the tols.

 

To prevent fingerprint stains, seal it then paint it with a flat water based enamel. Resene do a flat bathroom and kitchen spacecote that would be perfect.

As mentioned, 10-12 mm MDF is a good fit for the job.

 

Your local joiner or kitchen cabinet shop can cut you a piece.

You haven’t given the dimensions and that could be relevant to a good answer. I’m guessing a fairly standard size of about 60x60cm?

Have you considered installing a hinged hatch instead of just using a piece of board?

 

Obviously, there will be additional work required to install it, but it's a tidier solution if the roof access is in a visible area.

 

I needed one for roof access via a bedroom and it cost $108+GST for a 600x600 hatch in 2023.
