Getting pretty nuts for each end could be a concern but should be fairly trivial - I think those cone-shaped ones visible would likely do it. 

 

 

If the OP has the right machinery they would also get some bar stock and drill and tap the ends, then screw them onto the threaded rod.

Yeah, not going to be DIY'ing this, other than final assembly. I think I've sorted the shelves, just need to find a suitable supplier for the standoffs at this point. Not opposed to sourcing from overseas, but my searches so far haven't returned exactly what I need. I don't want to grab 2 of the standoffs and screw them as this will make the unit bigger than I'd like. I don't think I could get the ones I pictured x 2 and then have 4 of them cut in half, as I don't think the standoffs are uniform throughout, and that may mean I don't end up being able to attach a full one to a half-sized one?

Not well, I have put it on the back burner till I have more time again. The issue is finding the stand off's everything else is straight forward. I believe I will be able to eventually find something on Ali Express or similar, but I haven't got spare time to invest in this right now.

Did you consider the option of tube with a threaded rod through the middle? That way everything can be trivially cut to length.

Imagine the tube is something slightly prettier than faded electrical conduit. Each shelf has a hole large enough to admit the threaded rod, but not the tube. The stack of tubes and shelves is held together by tension in the threaded rod. Use pretty capped nuts like those that come with the standoffs you were looking at on each end of the threaded rod.
