I am also a committed vegetarian. What carnivores don't seem to understand is that vegetarians do not miss meat. We are not looking for a substitute. I simply don't like meat and over the years my revulsion has grown. The smell of frying bacon and other pungent meat odours sickens me. It makes me want to retch. If I wanted to eat meat, I would. I don't.
I became vegetarian 5 years ago for ethical and environmental reasons, not because I didn't/don't like the taste.
I still have the odd hankering for a burger or a bacon sandwich etc and it is only my fondness for animals and the desire to minimise the harming and suffering thereof that keeps me on the straight and narrow.
I recently tried the new Sunfed Chickenless Chicken and enjoyed it very much, though it is definitely one of the few meat substitutes that comes close to its claims.
Perhaps in another 5 or 10 years I would feel the same as you do, but it is definitely my mind that has changed and not my appetites!
I think the sensitivity increases over time. I was never a fan of meat, but I didn't hate it. I ate it because that is what I grew up with. Eventually I decided it was not something I needed or wanted. Over time the revulsion grew. I have been meat-free for several decades.

My initial reaction (without delving deeper into exactly what it is) is it's a bit off putting.
It's just another form of processed food. Anyone whose eaten highly processed stuff like Pringles or Grain Waves or Cheesels should have no issues with meat from a vat. :-)
It's meat....grown from animal cells. You just didn't have to kill the animal to eat it. In a way it's the perfect food for someone who doesn't want to give up meat, but doesn't like the 'murder industry' it currently comes from.
It will free up land currently full of livestock. Maybe it can return to forestry....or housing. Or flowers and bees. Or filled with solar panels.
My issue would be who controls this food? It doesn't sound like it would be a Mom & Pop business......it will be multi-nationals controlling your food.....and not transparently, either. "Commercial sensitivity" don't you know.

I'd give it a try, I doubt it will meet my taste or meat dietary requirements, however, but could be a substitute for kebabs at most.
