It’s not quite that bad. I did keto without such a stern approach. You can have some carbs as long as you keep it below a small limit each day - typically less than 50g nett carbs. You know when you go into ketosis by an initial period of feeling meh and the ketone smell. There’s no real need to test.
Some fruits are ok in moderation especially avocados, berries and melons. Most salad greens and non starchy veggies like broccoli and cauliflower are also ok.
It is not that hard if you shop for it and eat at home. Plenty of good keto recipe books available too.
