Handle9: Hummus (and baba ghanoush, moutabal and fattoush) is one of the best things about living in the middle east. The stuff in NZ is like NZ gucamole - a poor imitation. I'm not sure what the difference is (I suspect the tahini) but it's like crack.
It's always served with oil on top which also makes it so much creamier.
Lots of things taste better in the place they originate from. I guess that's why they were so popular in their place of origin.
Using guac as a example you need nice limes, avo and chilies (and maybe other ingredients too).
We may not have the same varieties or they may not grow as well here, or be as fresh, or different terroir or ...
I also think there is psychological dimension.
