Specific answer: This is not a taxi licence (as above).
Uber is not a taxi company and does not operate as an approved taxi organisation (ATO).
In NZ all drivers with a p endorsement are police vetted. Uber drivers must have a p endorsement.
The ATO in theory provides an additional level of protection for consumers on top of that process. Uber in common with other private hire like limousine etc does not have that.

Overall I've been impressed with Uber - especially when I'm travelling overseas.
Some downsides such as getting vehicles outside CBD areas can take longer or in some areas there is rarely an Uber available. But in those cases I revert to a taxi if needed.

This perspective is kind of incorrect. Demand pricing is a major component of the business model. If your perspective is that it is always cheaper than a taxi service then you might be surprised.
Yes, but I think I wouldn't be surprised, because I believe a pop up comes up warning you of the higher priced fare? Is this correct?
I personally do not know the answer, I have not yet used the service, but the recent (month or two ago) Herald articles indicated no warning. According to one of those you must specifically click the 'fare estimate' button otherwise you are not going to know high demand pricing until completion.
