I VPN to my Fritzbox 7390 so I can access security cameras, and you can connect out as well. Works fine. Wasn't too difficult to set up, but not trivial either. I put my steps on this thread.

is there a way to know/be sure that the VPN service is not intercepting your data?

Honestly its not as simple and clear-cut as “yea you should use a VPN”. It really depends on what you want to do, and this involves knowing a bit about it (which most people don’t).

If you want security against interception except for your vpn provider then you use it. Most apps, including banking apps are already encrypted so it doesn’t add to much more in that sense.

Privacy, anonymity, access to certain things - definitely yes, but again you have to know how it works. For example, in China you either Roam on cellular or use a vpn to be able to do certain things.

For the average person vpns are not in the category of ‘it just works’ so i would not recommend unless they actually have a need for it.
