Sky box ---> Red/White/Yellow ---> Onkyo ---> HDMI ---> TV. If your parents think they're getting ripped off by not getting 5.1 surround sound while watching Sky, then set the Onkyo to simulate surround sound every time they switch to the Sky input. If not, just keep it on 2-channel and leave it well enough alone. If they have the TV set up to also utilise its UHF Freeview tuner, then sure, buy a coax cable so they can listen to Freeview through their speakers. Otherwise, don't worry.

Now I have had a search but am unsure if the HDMI from sky box to - receiver to - tv will now pass 5.1 audio? Or do they have to buy a optical or coax cable from sky to receiver? (and maybe from receiver to tv?)
They have also invested in a Sony BDPS1100 Blu Ray player connected via HDMI. The manual doesnt say if an Digital Coax cable is required for 5.1? I'm assuming it
Lastly, can the sky remote be used as a tv remote (to change volume)? As currently there is one volume for the tv, and a different volume for the sky?

I don't know about the HDMI out on MySky but I would expect it to carry 5.1 sound. Try it and see I guess. The BluRay should definitely pass surround sound although you may have to check in the setup menu if it set for surround or downmix. As for the sound level, I just leave my Sky at max vol and use the amplifier vol control to control the sound though I do use a Harmony remote. If using the TV remote just leave Sky at max vol. I have never understood why Sky has vol control on the box. Better to use a set level and control from external equipment.

If you can, get them the Harmony remote, one remote will do it all and it is easy for 'parents and in-laws' to work out once setup. You should not need anything except HDMI form Bluray to AVR, HDMI from MySky to AVR and HDMI from AVR to TV.
If you do not get a Harmony remote, Sky remote will only change channels/set and view recordings. Onkyo Remote will set volume and choose input source (and I think you can set it to turn TV on/off?) Bluray Remote, for playing and navigating Bluray/DVD You should not need the TV remote - It should always be set on HDMI input, with volume right down (assuming Onkyo remote can turn TV on/off).
With a Harmony, you can setup activities: 'Watch DVD/Bluray' - Turns TV on, Turns AVR on to input for Bluray, Turns Bluray player on. Volume buttons on Harmony control AVR volume, Play/FF/Rew etc. buttons on Harmony control Bluray.
'Watch TV' - Turns TV on, Turns AVR on to MySky Source, MySky probably already on (I leave mine on the whole time). Volume buttons control AVR, Other buttons on remote control MySky.

I read a few forum posts that mentioned the need of a coax cable for the sky box. They were all old posts tho.
After more searching, I did manage to try some things today which helped.
Linked the tv to the avr (Toshiba calls it regza or something). Changed the audio setup in the sky settings for Dolby D to hdmi (thought the sky technician would have done this, especially as he said he knew home theatre systems).
This has made the sky volume control redundant, and the tv & avr will turn off together when either is pressed.
So only 2 remotes needed now (avr & sky) which is good. If they still have issues then will get them Logitech remote for Xmas
The only thing I would like is if the tv and avr would turn on after pressing power button on sky remote. I don't think sky has the cec / hdmi control though.
