With the ir control I still think this is the way to go:
It's basically configured like a harmony remote....choose the devices and set the inputs.

So, back to the original problem - I think @geekiegeek had it - I created a shortcut on my iPhone to change the channel, and then Siri can run that. It's not quite 100% as Shortcuts appear to be limited to the device you create them on, and not in the Home app.
I also seems you can run shortcuts on the HomePod, which would be fantastic!
Next up, getting some sort of IR control - like a Harmony Hub, to turn on the TV as well and add that to the Shortcut!
they are limited to the device you create them on but can be shared with other users. I share mine, created on my iPhone, with my wife’s iPhone. This allows us both to run all the shortcuts as long as your phone is in the house.
davidcole:Now I have read your comment properly, I get what you mean - using an IR device INSTEAD of using the Kodi HomeBridge plugin, correct? That would get around limitations of HomeBridge. I see there are several models of the rm3, any advice on which to get? Did you get it from AliExpress?

If kodi can already choose channels (ie run the stream) and you can access that from homebridge then it should show up in the home app as a "channel" so the same methodology should apply. my rm3s are about 4 years old, so unsure what current versions are. Yes it was from aliexpress.
