We are looking at getting ultra fast put in, but we're wondering if we select the slower (cheaper) ultra fibre 30 option if it was easy to upgrade to the ultra fibre 100 at a later date if we decide to upgrade?
Is it simply a matter of flicking a switch at telecom or is more optic cabling or a different piece of hardware required?

Does anybody know?

It's all the same equipment, basically a switch flipped at the Local Fibre Company (probably Chorus).

if you upgrade to 100mbit fiber using wireless wont do it justice just a fyi.

Depends on your router really.

You would need one of those "300 mbit" wireless routers and client radio in your computer (built in or with a usb/pci card)
Most routers will handle 100mbits using normal ethernet cables though.

The devices that need the fast connection will be networked into the modem/router (TV, gaming PC and laptop for downloads), everything else will just sit on the wifi.
