Router: Shuttle DS57U running pfSense.
Switch: DGS-1016D.
Wireless AP: Archer C3200 (being used as AP only, all other functions disabled).
Pretty consistently 890/500 or higher. I did have to buy an Intel PCIe NIC, the built in qualcomm on my mainboard crashed and had to be reset under anything much higher than 150mbit sustained.

We have found the citylink (Wellington) speed test server to be very bad.
The spark one seems to be good.
And I'm going to make them even better shortly. All you jokers running speedtests on your shiny new gig connections have nearly pushed one of them up to 10% average utilisation :-)
Just jealous that I can't get fibre yet so can't play :-)

I have not had too much of a chance to tune my network any further however will likely buy an UniFi AC AP Pro to just play around with / test.

Hmm, I might need to do some investigating. Fastest I've seen is 650Mbps.
Mikrotik RB2011, hardwired CAT6.
Fastpath is enabled for established & related connections. Will do some iperf across VLANs this weekend to test what sort of throughput the router can handle.
RB2011 is no good a good solution for Gigabit. It's not powerful enough to be usable even with Fastpath/Fasttrack
I'd never deploy one for anything faster than 100Mbps if it's required to do anything too complex as they're far to easy to bog down if you start adding rules of any sort.

The 3011 is a great upgrade 1.4ghz dual core processor 1gb ram - it uses about 30-40% CPU to route 1g PPPoE

With Fastpath you'll get better performance, but you really need to understand what Fastpath does and doesn't do.
IMHO Mikrotik's biggest failing is that they've stuck with older gen CPU's for way too long. These are fine for slower speeds, but not for high speed connections.

I feel I should be getting faster speeds since looking at others results.

Your result is within our expected range for Gigabit customers - but that being said, and given the speeds others are experiencing, I can't see why you shouldn't try to get higher with a router upgrade.

Suggestions? Would the Asus RT-AC68U make any difference to what I have now?
I actually have along with the RT-AC66U a RT-N66U as well so was thinking of selling both of them and upgrading to something better anyway.

Upgrade your router just so your speedtest results are better? It's not like you'll ever be able to get close to using such speeds in the real world.
