I'm on UFB with Vodafone using the supplied HG659 modem. I see using the admin login you can change the router to bridge mode. I have an Asus RT-AC66U router that I use for wireless, so I tried putting the Huawei into bridge mode and using the Asus to handle everything. It said it was connected and everything was looking good settings-wise, but there was no internet access at all.

So does this mean it can't be done or am I missing something with the settings?

When you say UFB do you mean a fibre connection?
If so you shouldn't need to use the Huawei unit at all. Connect the WAN port on the RT-AC66U to the same port the Huawei unit is connected to on the ONT.
In the RT-AC66U settings you will need to enable VLAN 10 tagging on the WAN port. I am unsure which authentication method Vodafone use for UFB, but you should be able to find this in the Huawei unit. It'll likely be PPPoE with your username and password, or DHCP.

You would be out of luck. How about just plugging it in and using it as an AP?

Yeah that's how I have it set up at the moment, was just hoping to use it to handle everything but I guess not!

I have an RT-N66U. It is almost exactly the same as the RT-AC66U, except it has a different wireless card. It does support VLAN tagging, both on the stock firmware and on custom firmware.

If you run through the setup wizard on the stock firmware (IME with two different Asus routers it forces you to run through this when you first set it up) it'll ask you if your connection needs any advanced options. It does. VLAN 10 tagging.
If you're not using the setup wizard you'll find VLAN tagging under the advanced options with the IPTV settings. The wan port needs to be tagged as VLAN 10.

You could also flash custom firmware onto it, which will support VLAN tagging, along with a bunch of other nice things.

I assumed that one would have that figured out.
Maybe a HG659 in AP Mode?

Well it turns out I just didn't know what I was looking for!!!

The Asus RT-AC66U DOES do VLAN tagging so I now have the ONT plugged directly into it!
