What's your use case? Do you have control over the client devices?

I've seen various applications of data over SMS..

Is is still possible for them to snoop even though its end to end encrypted using signals encryption protocol ?

Even though they use the SIGNAL encryption for the transmission phase does their source code get audited to see if they're snooping at the unencrypted stages?

I don't do txts any more. I've turned off notifications and don't even have the MESSAGES icon on any of my screens. Nobody I want to communicate with does so via txt. I use SIGNAL, Viber, LINE (and occasionally Whatsapp but I avoid apps that don't have a desktop version). I don't use Facebook Messenger (I don't use anything Facebook). Viber is still my primary although it has been slowly going downhill. The IOS version of SIGNAL is pretty useless (apparently due to Apple restrictions) and LINE is a hassle to log in to on desktop.

Yes but I need communication with multiple devices not connected to wifi and it is stupid to get a data plan for every one of them.

There are overseas providers which offer shared data pools, international roaming etc designed for M2M (now "IoT") communication. A friend is using one to communicate with his GPS trackers in NZ over 2G/3G and I believe it's pretty affordable.

Otherwise as mentioned there SMS can be used to transmit limited amount of data however you start crossing the line on most ISP's T&C's; speaking of which not sure if 2degrees system still allows nested data sharing groups... 😉
