Hi,
What version of desktop Office version can be installed with a legit 365 Education faculty license login?
I've always used a one off Office (ie Office 2019) license and have never tried 365.
Or would you even do that? Yes, confused.

What ever ring you're joining with your school account, it's a microsoft 365 sub if your school is set up that way.
I know SIT, Te Wananga uses 365.

More specifically you should end up on one of the supported versions listed here. It should stay current and update automatically to the newest supported versions. The channel you are on is set by the Office 365 administrators for your account, though depending on admin rights you can probably change this manually. When installed you can find out what channel and version you are on by opening one of the applications and going to File then Account or Office Account. Next to the about section is the channel and version/build.
The 365 versions are pretty much but not exactly the same as 2019 one-off, some features and functions are not available in 2019. The year versions don't really exist in the 365 world and are just marker points in the 365 product lifetime for Microsoft to then sell one-off versions.
