Guy at work is using dual monitors on his M1 will ask him and see what advice he can give!
Assuming dual external?
How are you connecting them, daisy chain? Both off a dock? One monitor on each USB-C port on laptop?
Might need a few more details? What's not working, one monitor? Both? How are you connecting them?

You need to purchase a displaylink enabled adapter
M1 doesn't support driving two screens on USB-C Alternate Mode, you will need a USB DisplayLink adapter to drive the second screen...

update op.
Balm its gone!
That dock you have will not support 2x external displays with an M1 powered Mac because it lacks the earlier mentioned displaylink logic.
Belkin's own support page says as much:

Basically your current dock is just passing through the thunderbolt signals back to the laptop, with all their current limitations.
Other docks with displaylink capability are akin to plugging in a weak/basic graphics chip that can drive more screens.

Thanks, would like to know you can provide the brand or model so I can get back to normal. Apple said something about software update to fix this but nothing.
Balm its gone!
There are lots. Dell & HP, Targus, Kensington (don't have model number for recent models handy)

You could upgrade to one of the new MacBook Pro's that do support multiple external displays...
I had a 13' M1 MBP, running 2 ext monitors using a DisplayLink compatible small Satechi dock - one via USB-C to the laptop, and the other by HDMI from the Satechi dock.
I'm fortunate enough now to have a 14' MBP, and it's much more flexible for outputs.
