jonb: Simplest would be to buy Skype credit, maybe a 1 year subscription for 300 mins a month to landlines in most countries (and mobiles in UK) for ~$4 a month.

Otherwise a VOIP account(e.g. sipgate.co.uk), and you can get a UK VOIP account to have a local UK number to call from and people to call to.

I don't find the audio quality very good on Skype. Is there a way to improve that?

Have you tried Skype to Land Line?

I was in Germany a year or two ago in a backpackers on an extremely over subscribed wifi connection, call quality and latency back to NZ was brilliant.

Buy a headset/mic or audio handset, and get them to get one as well,

The quality on regular phone lines also sounds poor when you are both on speaker phones ( which is essentially what you are doing both using computersfor skype)

You only need the other side to use Skype if you are calling PC-PC. If you use Skype to call landlines only you need a headset.

I have been using voipbuster for years (more than 5 years). Lots of free calling to different countries including NZ but unfortunately not UK!

You can install it on your windows, mac, mobile os (android, ios etc).

I have the app on my mobile too - no problem making calls over 3G, wifi.
