The hours are too short. The dairy near my old house was open from 7 every morning, and some nights he wouldn't close until 10.

Yeah, I think that the point I was trying to make was that another and more common term for a dairy is a convenience store, and closing at 5:30pm before people get home from work and realize that they didn't get milk/bread/whatever on the way home and it's SO far to the nearest supermarket, isn't very ... convenient.

 

I'd be inclined to start with opening at 7:30pm and closing at say 8pm initially. She will get a feel for the demand on her services pretty quickly to determine if it's worth staying open. Also bear in mind coffee is normally consumed by people in the AM, and people are usually in a hurry, so a) the coffee has to be good, and b) getting it quickly is the key to repeat customers. If she is the only one doing it, and is serving general customers too, I suspect it will end up a struggle.

On the school route aim at parents taking children to and from school then locals during the day. People appreciate a good dairy. It will take time to find out what is important to them.

As per the previous poster i would not do smokes. Yes it will be a challenge. In both cases it will take time to find what works. I hope your friend has planned for a year or two.
