If you watch the video, it's not as straight up the line as one would hope. But the nozzles all move and are likely gyro guided. Similarly how you get a wobble on a dart but it flies generally where you send it thanks to the weight and stabilising at the butt end

 

In the larger birds such as the Falcon9, they also have compressed air jets guiding the top end. Not sure if Electron has a small servo fin setup that may deploy..
