Most of my favourites have already been listed (Techmoan, Colin Furze, Technology Connections, Tom Scott).

 

The only videos I watch daily are those from Glen And Friends Cooking https://www.youtube.com/user/legourmettv

 

Glen's videos were recommended when he was trying to recreate the 1886 Coca-Cola recipe. Since then he has also done a series on KFC. I particularly enjoy episodes on old cookbooks and the history of how ingredients and recipes have changed. He works in television production, so the quality of his work is great, and unlike many cooking channels, shows both success and failure.

I don't watch much youtube, but during lockdown last year someone on here recommended this channel when real life motorsports got covided. 

 

I've been watching it ever since.

 

Toy car racing on tracks, tournaments, great sound effects, slick video, and getting better and better.

My all-time favourite has to be Retro Recipes by Perifractic - https://www.youtube.com/channel/UC6gARF3ICgaLfs3o2znuqXA

 

As the title suggests, he does videos about retro computing (which is definitely my thing lately), with videos about the history of old computers like C64, Mac, Amiga, Atari ST, and more.  He's got a great presenting style, an ASMR voice which is hypnotic, and is frequently joined by his counterparts Ladyfractic (his partner) and Puppyfractic.  The videos are fun and entertaining, have pretty good production values, and always interesting.

There's something very calming, even meditative about this channel. The way he just quietly narrates without feeling the need to keep talking all the time. 
It's utterly unlike so many of the hyped shrieky channels around the place. It slightly makes me want to move to somewhere off-grid and do what he's done, but it would take me many lifetimes to not only learn all his skills, but also his common sense and methodical way of going about solving problems.

+1 for Marty T, a great NZer and interesting watching him get that old gear working. If you like watching people get old engines going Mustie1 is another great channel.

 

For entertainment Matt's Off Road Recovery - family friendly, great people and beautiful scenery (Utah, near Zion National Park).
