Traditional German „Handkäs mit Musik“ (Sour milk cheese with music)

 

You‘ll need

 

1 roll (4 slices) Handkäse (a sour milk cheese with only 0,5% fat) - 1 to 2 weeks before „best before date“ otherwise it is too young.

 

2 little onions chopped into 2mm cubes, a few onion rings for decoration maybe

 

A marinade consisting of:

 

3 Tbs apple vinegar

 

3 Tbs apple juice (100% juice)

 

2 Tbs rapeseed or sunflower oil, but NOT olive oil because it is too strong

 

1/2 tsp (shortly roasted) caraway seeds

 

Salt and Pepper

 

 

Place the rolls in a 0.5 litre container, mix the marinade, chopped onions and caraway seeds and season with salt and pepper. Place the mixture between and on top of the cheese slices, use a spoon to ensure that the marinade gets everywhere, sprinkle over the remaining onion slices as decoration and close the container airtight with a lid.

 

 

Leave to marinate at room temperature (~20DegC) for at least 6 hours, preferably 12 hours, and then enjoy. You can delay the start of the maturing process by putting the box in the fridge first and only allowing the maturing process to start when you take it out.

 

 

It is eaten with fresh butter on sturdy grey bread or brown bread. Pumpernickel is also fine if necessary, but never toast or anything white like that. It goes well with cider or a top-fermented beer. No wine with it! Enjoy your meal (and I don't care where you get the cheese in New Zealand - here in almost every grocery shop) 😈.

 

Oh yeah, what's the music? Well, the onions and the dressing. Be careful, if it is left to mature for too long >24h, the whole thing will tingle like champagne bubbles on the tongue. 😉

Here we go: https://www.handcheese.online/ but quite hefty prices. We pay 1.79€ (~3 NZD) per roll (4 slices).

0900UTC IS in fact 1100LCL (or 11 a.m. MESZ) and the real heroes we need drink a whole bottle, not just a small glass a week like me. It's a stimulant, not a thirst quencher, and you have to be responsible (as with everything). In reality, it's an excuse for later, so that I don't have to drive, but the First Lady does (remember, she is the doctor). 😉

 

BTW I have to correct this weekend the time zone again (2x with every DST change at different dates, once for us and once for you). 🤣 You still strictly refuse to teach your servers this out of charity. 😇

And after a sunny spring day, on which it was warmer outside than in the house at 23DegC and a convivial invitation to friends (remember the whisky 😉, which was part of the breakfast I made today, as my wife was still at work), we are back safe and sound.

 

Time for a light supper, this time a French fish soup (no, unfortunately not a full blown Bouillabaisse, but again with a Cognac IN the soup 🤣). If you want to cook refined or authentic dishes here in Europe, you can't do without alcohol for reasons of flavour.

 

The virtuous person here is the one who can handle alcohol responsibly and does not abuse it. Incidentally, over 10% more spirits are drunk in New Zealand than in Germany.

 

 

 

 

I don't know about you when it comes to cooking, but when tomatoes are involved, the cooker always looks like „my submarine has been hit by a plane.“ 😶‍🌫️

A late breakfast today as I only got home from the forest this morning. Without whisky on weekdays, of course 😁. Mustard and horseradish are not for the scallops, but for the 3 small mini Nuremberg Würstchen afterwards.

My tip for cooking in 2024... Buy a decent reputable instant read thermometer (Inkbird and PureQ are both brands I trust). 

 

Take the guess work out of your cooking. It's safer and better overall. 

 

 

Last year was the year of the kitchen for me where I got into a lot of different appliances, cookware etc and I also picked up a meat thermometer. I bought the thermopro for cheap maybe from aliexpress? I also take it when I travel. It's just bang on perfect for cooking and checking meat without having to cut into it to check. 

 

I'm debating the breville joule turbo sous vide (really cuts the cooking time) but it's made for the US market so would need to use with an adapter and I'm not sure about that. I subsequently haven't bought a sous vide. I don't need it but kind of want it. Putting a steak on and walking away from it, a quick sear and you're done? Would be bliss!

I'd just get the Anova sticks. More flexible, more portable, and have a bigger community.
