This was actually intended for Christmas, but we met some old acquaintances and were invited to a festive meal at short notice, so I had to postpone this menu. Never mind:

 

Steamed duck breast, briefly fried until crispy, with Brussels sprouts and rice in Cantonese sauce.

I was compelled to recreate the tteokbokki snack from Christmas Eve lunch. This time, it was entirely handmade... and on New Year's morning (yes, it was another bet, but one where everyone won). Here's how it went:

That’s real comfort food full of carbs and perfect for your winter. Well done Tinkerisk. In my next life I want to marry a Gordon Ramsey who will do all the cooking while I sit back watching in admiration.

 

I’ve been reluctantly cooking since the age of 4 when I woke my parents and served them 'breakfast' in bed at dawn break. I have very clear memory of their shocked faces, no doubt in panic on how I reached the stove via a chair and the horror of me using a knife and managing to fry just onions. Obviously had watched my mother very carefully.

I must admit that it was only after (deliberately prematurely) ending my high-tech career that I got into cooking, working at full throttle all the time. Like other things that social pressures mean we have little time for these days (healthy eating, exercise, preventive healthcare). Everyone has to decide for themselves what is good for them, and since I have always been curious about foreign food and enjoy eating well, it was an obvious choice. I am only self-taught, not a professional chef. 🙂

Today, we had leftovers from the fridge, which had been well stocked with fresh vegetables and frozen poultry over the holidays. We had the famous magic potion from Asterix and Obelix – well, a kind of it, anyway.

 

 

I'll spare you the gruesome sight of the soup (beetroot!), but it tasted good nonetheless. Tomorrow, I'll be going grocery shopping for the first time this year. 👨🏽‍🍳🙂

Many people seem to struggle with cooking rice. Our son is a great cook but he uses a convoluted, time-consuming method of cooking rice - and for some reason doesn’t want to use my method.

 

For decades I have successfully cooked rice in the microwave. For basmati I use, say, 1 cup rice in 2 cups of water - uncovered in a large Pyrex jug/bowl, uninterrupted on high for 14 minutes. Always works - all the water is absorbed.

 

Last night I wanted to do something with arborio rice. I don’t cook it often because I can’t be bothered with the time it takes to make a risotto - at least half a hour with all the palaver of adding liquid slowly and stirring. Maybe not so bad with a glass of wine in the spare hand.

I asked ChatGPT if arborio can be cooked in the microwave. It gave me a method - very similar to my basmati method but with a 1-to-3 rice:liquid ratio and two stages - high for 10 mins then medium for 10 minutes - then stand for 3. You can replace of all or part of the water with stock - and any other flavours you want.

 

It worked perfectly so arborio will now be back on our menu.

I really like Brussels sprouts but don’t cook them very often these days.

 

Quite traditional with the Poms at Christmas and I have an ongoing joke about sprouts with an English mate (who lives there). A couple of years ago we were talking to them on FaceTime on Christmas Eve. Asked them if they were having Brussels sprouts with Christmas dinner. Phil said: “Yeah, we put them on to boil a couple of days ago”. Classic.
