I was hoping the phone would be like it was before I went with stuff fibre which was a copper connection. But I suppose thats gone now just wanted the phone line to work with out the ATA box, perhaps I could get a voip phone or an app to replace = https://stuff-fibre.co.nz/home-phone
You could just plug any cordless phone into the ATA.
ETA: The ATA is simply replacing the jackpoint in the wall. With a cordless phone the ATA could go anywhere there's a LAN port.
Keep calm, and carry on posting.

So you have or have not moved the phone number to trustpower?
What settings has trustpower given you for the phone? Like others have said have you tried plugging a normal phone into phone 1 on the ONT?
Right, so that is just a VoIP sip client they charge you the pleasure of using.
Lots of routers and 3rd pty providers allow that. But you will again need to sort out the porting.
If you changed provider. The stuff stuff should be dead and buried and handed to the new ISP. It shouldn't be working anymore. And unless the new ISP doesnt do voip, should have given you the new details to configure it.
Fritzboxs can do just that with some configuring. I have a VPN (so its not open to the whole world) and when in aus/away on wifi link in like I'm sitting in the lounge.
And looking at it, if you are on ADSL/VDSL.. good luck getting copper back :) they only do VoIP on fibre

If it was even possible to get back to the copper line, you would be paying (guessing) $50 for the line each month.
Presuming you like the nice fast fibre you would be paying for that each month as well.
It seems like you expected the phone number to move to Trustpower and it seems that hasnt happened somehow. I am surprised that your phone number is still working to be honest.
Stuff fibre don't seem to provide just VOIP phone services. I wonder if its due to be cancelled (if you have only just changed over maybe it will work until the end of your old billing cycle).
Given that your post has seemed a bit confusing, I suspect you need to do this:
The number will be a VOIP number - dont go confusing people with talk of copper.
I have no idea if they have an app for your phone line for your mobile - you need to ask them if that is important for you.
You also need to ask how you set the phone up at home. Some internet providers provide a router that has an ATA built in. No idea what trustpower do.

It appears my number hasn't been ported from stuff fibre to trustpower. Trustpower told me it would be done Thursday morning (today} Just been in touch with stuff and was told = This process is not controlled by us You will need to follow up with your new ISP
So I don't know who to blame who do I contact now?
Your new RSP is fully responsible for porting, it's nothing to do with your old RSP.
