Unfortunately there aren't any spare sockets on the wall to tap into.
Anyway, thank you all for your help!

Double adapter then?

Usually chorus will have the tech sort this out at install time if you asked for it with another jackpoint at the ONT location and you just plug into that with a rj12 to rj12 cable.

As far as I know Chorus is still supposed to install an "ITP" or internal termination point, essentially a new jackpoint next to the ONT. They usually try to get out of it by claiming that you just move your cordless phone next to the ONT or router, but you can tell them to do it properly or they will be back to get the phones working again.

Time to find a new industry!

I haven't heard of this before and I haven't heard of Chorus techs installing an "ITP". Is this written down anywhere? How can I tell whether an ITP has been installed? What does the ITP have to do with landline phones?

Easiest way might be using Spark, who hook it up to the existing phone wiring from a port in the ONT.

Can it use the existing house phone wiring that way if the copper between the house and the street is severed?
