gzt: Gmail. Better layout, faster interface, higher reliability and uptime.
slartibartfast: Go with Gmail (Google Apps) - you won't be dissapointed.
It will support pretty much any smartphone well, and has loads of other features (e.g. Google Docs, Sites). Very fast, very reliable.
Of course, if you're on Windows Phone 7 or have lots of other stuff already with various Microsoft entities then Hotmail might be better.

jjnz1: Last week I would of said Gmail (google apps) all the way. Until this came out...
billgates: I disagree with the higher reliabilty and upime part. Any proof of this? Because both hotmail and gmail have suffered from outages in the past. In the end it comes down to the interface and the extra features they offer.

Now I can't even see the competition, including outlook. My new gmail looks a bit different to this, more like Outlook, with a better preview pane.
