I am in the market to purchase a new mobile phone along with a Bluetooth wireless headset. I was hoping that I could get some recommendations on what to begin looking at and or some personal experiences using the Bluetooth connection on your phones etc?

In general the Jabra headset is very good with most mobile phones. If you're looking for GSM phones, there are two types:

Featured phones: Sony Ericsson makes good ones, like the Z600, but they have a few coming out this month and next months (the Z700 for example).

Smartphones: In this case you can choose between Windows Mobile based (like the i-mate Smartphone2) or Symbian based (Nokia Series 60 like the Nokia 6600 or UIQ based like the Sony Ericsson P900).

Prices will vary from lower on featured phones to higher on smartphones. I'm using an i-mate Smartphone2, but used the Sony Ericsson P800 (predecessor to the P900) before.

All these phones I listed allow you to use them as modem to connect to the GPRS network as well, if you want to do it later.
