I wouldn't see the point in redundancy if it's just movies. So 2x 12TB drives gets you pretty close to 24TB ;-)

If you'd spent hundreds of hours ripping your entire DVD and Blu-ray collection, ensuring every TV episode is ordered and named correctly, I think you'd see things differently.

If it really was of any importance, then a Full backup to another device would be required .

If you didn't want to spend the money on a NAS, and the PC is switched on most of the time anyway, just install Plex Server on the PC, and the Plex client on the laptop.

Then tell Plex where you store your files (it can be on the PC internal drive, or external USB drives, and Plex will bring them all into your library for use on any Plex client (and there are Plex clients for a lot of things now - Smart TVs, AppleTV, Android...)

I'd say first decide how much you want to spend, and how much time you want to devote to this.

Many people already have enough computer hardware lying around to build a your own NAS, on which you can put OpenMediaVault for the OS.

Plex is optional - I've never seen the need for it. I have an elderly atom board with 512 megs of ram, shared on the home network. Simple, and it just works. Video can be accessed from the Mibox, laptops, phones, etc. with minimal fuss.

Absolutely. Double parity, full offsite backup and the original media as the last resort.

Yep.
Ive just had to "fix" someones 6disk NAS that died. No backup , couldnt (easily) move drives to newer model , didnt even know admin password :-0
Manufacturer wouldnt sell or supply power supplies for it . Luckily it used standard PC MB power connectors so could get it running again .

Also, cant rely just on mirror . Mirrored drive isnt allways usuable when other drive fails .
